How to tune the engine

Hi, new to this forum, I need help. I have a Nighthawk CB750 from 1993 . It's modified to coffee racer. I'd like to know what you can do to tune the engine and if there's any place in Dallas where you know about these bikes. Thank you.

Cafe racers typically have pod-style air filters, which are a nightmare (read:  almost impossible) to tune with a bank of CV carbs.  Unfortunately, a lot of people dump the stock airbox without doing their research and the bike becomes a project that "just needs the carbs tuned."
Most shops won't touch bikes that are more than maybe fifteen years old, if they will work on carburetted bikes at all.
