For various reasons, I didn't ride for a long time.
During that time, motorcycling changed quite a bit. (What a suprise.) So what catagory does my 85 CB650 Nighthawk fit into?

Not really sure that it fits into any of the "modern" categories.  Not a cruiser, not a sport bike, not a tourer, not a sport cruiser.  Closest is probably sport tourer.

The modern category would be a "Standard" motorcycle
https://www.cycleworld.com/standard-motorcycles/

In the 1970-1990 era the bikes made by Honda, Kawasaki, Yamaha, and Suzuki were so similar (inline 4, same ergos) that they were referred to as Universal Japanese Motorcycle (UJM as Pete mentioned).

Now, almost 50 years later, if you use that term you have to explain it because many riders weren't even born when the term was coined.

The article I linked to has reference to "the best Standard" motorcycle" and there are Youtube videos comparing "Standard" motorcycles.
