To Winterize Or Not Winterize

That is the question. This may mean different things for different folks. From my perspective, as I like to ride a good looking bike, I do more than just the "necessities". Some level of winterizing is kinda "mandatory" however, if the bike is to start and run next year.
Talking about gas and spark - for gas either run the tank empty and fill out from a "pure gas" station - there's a list on the net, or use Stabil added to whatever gas you already have in the tank - I used both with good results; for the electrical part make sure the battery is fully charged and you don't have any "parasitic draw" that will kill your battery in short order - lead acid need attention newer gel type none. One comment, on older bikes with tanks prone to rusting, the Stabil method with full tank works best.
This gives the bike a good chance to start next year (normally). What's that mean... for example if your carbs were never off the bike, several months of fuel stagnation may cause some deposits which will affect your startup next year.
What's next? Well, I like to change oil/filter regardless of miles ridden just to get rid of contaminants that end up in there.
I also wash the bike and detail, especially the front end that gets the beating, chrome - especially the pipes and fork tubes - then the frame, wheels, etc. I treat the chrome with a nice polish that hopefully will slow down/prevent pitting and rusting. I spend time on the wheels, wash and wax. Then I do the frame, tank, side covers. Then I move to rubber conditioning, seat, plastics.
Chain - as I treat it every 600 miles, if I'm within that interval I don't bother.
Lastly, I cover the bike in the garage as I don't want dust settling on my clean and waxed bike.

I do similar to what you do.  I run the gas as low as I can get it. Put sta-bil in the tank.  Clean it, wax it and take the battery out and put it in my walk-in basement and cover it.  I will change the oil & oil filter over the winter before taking it back out in the spring. I will usually change the spark plugs every other year also even though they never need it.

I usually continue to ride through the winter -- at least once or twice each month.
I do keep it on a battery tender though.  Batteries do NOT like to freeze.

Some people are luckier than others...

Part of same process, just cleaned my riding jackets, full of dead bug traces... used Mothers Leather Cleaner and Conditioner that I use on my car seats, jackets look good..
