Currently, I'm rebuilding an 86 CB700 engine. It needs paint and will not go back together until it's been freshened up. I'm in Alaska. No one here does vapor blasting. The media all the shops use is too aggressive and I don't feel comfortable using it on my engine. Has anyone had experience removing the paint successfully that didn't involve a weekend of elbow grease? I'm too old for that silliness.

I don't remember if there's clearcoat over the engine enamel or not.  Certainly there is over the brushed aluminium parts.
If the factory coat is in good condition, why couldn't you just paint over it?  Clean up any bad spots first, of course.

It's in abysmal condition. Has to be taken down to bare aluminum. No worries though. I've bought all the materials to make my own vapor blast cabinet.

The blasting shop can change media to less aggressive (it comes in various grits). I blasted cases (for painting) with regular sand and it worked well. There are techniques to get various finishes (lower air pressure, blast from an angle). If you plan on painting over there's no reason to vapor blast. And the cases need to be apart, I've seen u-tubes with guys blasting whole engines after masking, that's something I would not do.
